Recording Prices

Is there a way to record prices (say every second, or 2 seconds, or even every 5 or 10 seconds) relative to the countdown for each race. I'm looking at identifying steamers/drifters, and would like to be able to record prices for the period 5 minutes to the official off, right up until the race itself starts which can often be 2 or 3 minutes or more after the race time (as often moves happen at the very last minute)?

What I'd like would be a column headed by 300 (seconds to the off) with say all the back prices of the horses below it, then the next column headed 299 with prices a second later, and so on. This would enable me to analyse data afterwards, as well as look to develop a bot should I highlight anything.
