How can I stop 'conditional bets' going in-play? I want the bet to cancel if conditions aren't met before the off.

You need to upgrade to the latest version 1.1.0.65n.
1) Uninstall the current version using the windows control panel.
2) Install latest version from http://www.gruss-software.co.uk/Betting ... istant.msi (sorry you will lose your preferences and have to re-input them)
This version has a tick box at the top of the conditional bets form: "Allow bets to be placed in play". If this is not ticked then the conditions will be ignored if the market is in play.
